本格的なレストランとカジュアルなレストラン（シェフは家族です）を経営しようと思うんですが、どういう点に気を付けた方がよいのか
ご相談したいと思って投稿しております。
急な家賃値上げや夜逃げも多いと聞きます。
場合によっては方向転換をしなければいけないのかな?とも考えます。
寿司シェフは人気だと聞きますが、そこそこ腕のいいシェフはご自分経営のお店持っていらっしゃいますし、日本から呼ぶとかなり賃金がかかるそうですね。
情報お待ちしております。

ハワイ料理で食べたいものって何だろう。
あんまり魅力を感じないんですが。
ポケくらいかな。
次々とお店なくなるので、新しいお店に行くと
直接は知らなくても、前このお店で働いてた人ですと人に説明できるのもハワイ。
繁盛店に見えても蓋開けないと分からない経理。
わたしは、辞めておけ！と言いますね。

野菜高騰、お肉は安いけれど野菜が高いですね。
お魚も。利益上がらなかったらビザの更新も難しいようです。
ハワイは島なので、食材は限られどっかから持ってくるしかありません。売値上げると稼働率悪くなりますので。後、人材の確保も難しい。目新しいお店は始め行くかも知れませんが、二回目が有るかどうかです。日本からくるシェフは自分のお店を持つ為にハワイに来るのではないでしょうか。確かに寿司シェフはどこも欲しいようですね。夢ばかりではなく経営学の勉強もしておいた方がよいでしょう。失敗する人沢山いらっしゃいますので。

経験ある大手もあわてさせるハワイのレストラン業界、不動産屋、自称コンサル関係者もある意味凄腕だ。

ハワイのレストラン、よく人材募集されてますね。
チップが高いと働きがいが有るので、よい店に行かれるんでしょうけれど。勤続年数３～５年と言った所でしょうか。
夜逃げもよくききますね。
